“Yee Sang” is a Chinese New Year tradition where people gather to toss a colorful salad of raw fish (representing abundance) and various symbolic vegetables together, signifying a wish for prosperity and growth in the coming year. People use chopsticks to toss the noodles high up in the air, with the belief that the higher the toss, the greater the luck will be brought in.
